Crushed Cucumber Salad

This is a very easy and quick recipe, ideal for the hot weather when we need to up our fluid intake also via foods.
Cucumber are rich in water and minerals, which are essential to keep us hydrated in this heat.
Electrolyte minerals such as calcium, potassium, sodium are key to proper hydration, as they play an essential role in body fluids homeostasis, keeping the body PH in balance and allow nutrients into cells.
Whilst drinking water is important, we can up our fluid intake also via foods – might be vegetables, soups and broths – which will also provide electrolyte minerals for extra hydration!
2 medium cucumbers
¼ red pepper, cut into thin slices
1 small bunch of chopped coriander
pinch of salt
1 tsp. brown sugar
1 tbsp. light soy sauce
1 tbsp. sesame oil
1 tsp chilli paste
1 tbsp. rice vinegar
2 garlic cloves, grated
Cut the cucumbers lengthwise, and then into 2 cm chunks removing the inner seeded part. Put the cucumbers in a bowl with a pinch of salt and set aside for 10 minutes. In the meantime, cut the pepper and chop the coriander. In a bowl mix the chopped coriander, soy sauce, sesame oil, rice vinegar, sugar and chilli paste and the grated garlic cloves. Discard the liquid in the cucumber bowl, add the peppers and the sauce and..enjoy!
