Tahini Baked Whole Cauliflower

Let’s talk about two nutritional superheroes that deserve the spotlight: Tahini and Cauliflower!

What’s more, cauliflower is rich in different types of fiber, including soluble fiber, which helps regulate blood sugar levels and lower cholesterol, and insoluble fiber, which supports digestive health and helps prevent constipation.

INGREDIENTS

1x whole cauliflower, leaves removed and stem trimmed

2x tablespoons olive oil

1x teaspoon cumin seeds

1/2x teaspoon smoked paprika

1/4x cup tahini

2x tablespoons lemon juice

2x tablespoons water

Salt to taste

METHOD

  • Preheat your oven to 400°F (200°C).
  • Place the whole cauliflower in a pressure cooker with enough water to cover the bottom (about 1 cup). Pressure cook on high for 5 minutes.
  • Once pressure cooking is complete, carefully remove the cauliflower from the pressure cooker and place it on a baking sheet lined with parchment paper.
  • In a small bowl, mix together the tahini, olive oil, salt, pepper, ground cumin, and smoked paprika. Add some water is the mixture is to dense.
  • Brush this mixture evenly over the surface of the cauliflower to completely coat it.
  • Bake the cauliflower in the preheated oven for 20-25 minutes, or until it’s golden brown and tender.
  • Once the cauliflower is done baking, transfer it to a serving platter or plate.
  • Garnish with chopped parsley, seeds or fermented vegetables.
  • Serve hot and enjoy your flavorful Whole Cauliflower with Tahini Sauce!
